When summer grilling season arrives, there will be plenty of burgers, steaks, and other proteins hitting the grill. Your main dish isn’t all that the grill is great for. Have you ever tried fresh summer fruit? Grilled fruit marinated in a delicious buttery glaze is the perfect accompaniment to any grilled entree.

When selecting your fruit, be careful that it isn’t too ripe; an over ripened peach or plum may end up falling through the grill and onto the coals. You may use any combination of stone fruit, pineapple, apples, or pears that you choose!

Grilled Fruit with Butter Glaze

Makes 1 ½ cups glaze

Ingredients:

Assorted seasonal fruit (stone fruit, pineapple, apples, pears)

2 cups apple juice
1 teaspoon lemon zest
1 tablespoon honey
1 stick unsalted butter
pinch of salt

Directions:

Wash and cut fruit into halves or pieces large enough to grill. You want your pieces to be thick enough that they won’t fall apart on the grill.

In a medium sized pot, bring apple juice to a boil and let it reduce by half. Turn heat to low.

Add the zest and honey. Stir until honey has dissolved. Cut butter into tablespoon sized pieces. Add butter a tablespoon at a time and stir until dissolved. Continue until all butter has dissolved. Add pinch of salt.

Remove from heat and let cool.

Coat each piece of fruit in butter mixture. Place on a medium hi grill and grill for 2-3 minutes. Flip and baste with butter sauce and cook until fruit is to your desired doneness.

Tip: The thicker the slice, the longer it will take cook. Softer fleshed fruits like ripe peaches and plums will cook faster than firmer fruits like apples and pineapples.
