Summer is all about time spent together. And for most of us there will be one point during the summer that will be spent confined in a vehicle en route for destinations of fun and discovery.

Golden rules of on-the-road traveling:
Rule #1: Well-coordinated bathroom breaks
Rule #2: Plenty of snacks between said breaks
Rule #3: Snacks must be portable, filling and are best when not purchased from a gas station

When it comes to snacks, Ham and Cheese Hand Pies fit the bill. You can snack on them with one hand on the steering wheel or break in half and share with the back seat.

Ham and Cheese Hand Pies

Makes 12-15 pies

Ingredients:

2 cups all-purpose flour
½ pound (2 sticks) unsalted butter, cold and cut into chunks
½ teaspoon salt
½ teaspoon sugar
4-5 tablespoons water
1 ½ cups diced ham
1 ¾ cup (7 ounces) medium Cheddar Cheese, shredded
1 egg, whisked
sea salt flakes

Directions:

In a food processor fitted with a steel blade, pulse flour, butter, salt and sugar 10-12 times or until butter is consistency of small peas. Add water and pulse 5-7 more times or until dough starts to come together. Turn out onto a floured surface and shape into 2 round discs. Cover in plastic wrap and refrigerate for 1 hour.

Preheat oven to 450°F. Roll out dough to ¼-inch thick and using a 5-inch biscuit cutter, cut round discs for pies. Layer each round with 1 ½ tablespoons ham and 2 tablespoons cheese. Lightly brush edges of circles with egg, fold in half and crimp edges.

Place pies on a baking sheet lined with parchment paper. Brush with egg wash and season with sea salt. Bake for 10 minutes or until crust is golden. Serve immediately or eat at room temperature.
