Party Potatoes Deluxe is a Midwestern side dish my Mom has made every single year, not only for Easter, but also Christmas, Thanksgiving, and every special occasion in between. I can’t remember a single holiday in my lifetime when it hasn’t been served.

Melted butter puts the deluxe in the cheesy, potato-based side dish (and the party for that matter!) and helps make each hot and decadent bite melt in your mouth. Cornflakes mixed with more butter gives the top a crispy, buttery crunch.

Party Potatoes Deluxe

Serves 8

Ingredients:

1/2 cup (1 stick) butter, divided
1 pound country-style frozen hash browns, thawed
1/4 cup green onion, chopped
1/2 cup sour cream
1 cup shredded sharp Cheddar Cheese
1/2 can condensed cream of chicken soup
1 cup crushed corn flakes

Directions:

Preheat oven to 350°F. Place 1/4 cup butter in an 8×8-inch casserole dish and place it in the oven to melt while the oven it heats up.

Meanwhile combine hash browns, green onion, sour cream, shredded cheese and soup in a large bowl and mix well. Transfer mixture to the casserole dish after the butter has melted. Bake uncovered for 30 minutes.

Melt remaining 1/4 cup butter in a medium-sized bowl in the microwave, then mix well with crushed cornflakes. Top potatoes with this mixture and bake for 15 more minutes.

    I’ve been making this recipe for years. However, my recipe is made with Cream of Mushroom soup. Every year on holidays I’m asked to make this. It’s creamy and delightful. With my way, I don’t thaw out the hash browns when mixed and I use half the amount of butter…bake at 375 for 65 minutes before topping the cornflake & butter mix. Talk about good ;-)
