On most weekends, we take a trip to the local doughnut shop and have a few of our favorite doughnuts. But lately, I have started to make baked doughnuts at home instead. Adding a few sprinkles make these super fun and festive. My oldest asked for these for his birthday breakfast. I felt like that was a huge victory.

Be careful to not over mix this batter, or the doughnuts can be tough. Be gentle-handed. If you do not have a doughnut pan you can bake these in a muffin tin, you may need to adjust the bake time.

Baked Birthday Cake Doughnuts

Makes 12 doughnuts

Ingredients:

For doughnuts:
2 cups flour
2 teaspoons baking powder
2/3 cup sugar
1 teaspoon freshly grated nutmeg
1 teaspoon salt
1 cup buttermilk
4 tablespoons butter, melted
2 teaspoons vanilla
2 eggs
2 tablespoons rainbow sprinkles

For glaze:
2 cups powdered sugar
4 tablespoons milk
Extra sprinkles for decoration

Directions:

Preheat oven to 350°. Lightly butter doughnut pan.

Whisk together flour, baking powder, sugar, nutmeg and salt. Set aside. Whisk together buttermilk, butter, vanilla and eggs in large measuring cup.

Pour liquid into dry ingredients and mix until just combined. Fold in sprinkles. Spoon batter into prepared doughnut pan, 3/4 full. Bake 6 to 10 minutes, or until lightly brown and spring back when touched. Let cool for a few minutes in pan.

When doughnuts are cool enough to touch, mix powdered sugar and milk together in small bowl. Dip tops of doughnuts into glaze and add sprinkles for decorations.
