Go Bold With Butter

Give the standard meat and potatoes dish a fun twist, with Beef and Potato Burritos! Seasoned taco meat, crispy hash browns, melty cheese and fresh veggies are all wrapped in a flour tortilla, for an unbelievably hearty and satisfying meal. Serve as a filling breakfast, make-ahead lunch, or hot and fresh dinner, with cold salsa and yummy toppings.

Beef and Potato Burritos
Serves 6


For taco seasoning:
2-1/2 teaspoons chili powder
3/4 teaspoons cumin
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon red pepper flakes
1/8 teaspoon dried oregano

For burritos:
1 pound lean ground beef
1/4 cup water
4 tablespoons butter
6 cups Southern-style frozen hash browns
salt & pepper
6 burrito-sized flour tortillas
Optional toppings: shredded cheese, lettuce, tomatoes, sour cream


Mix together taco seasoning in a small bowl and set aside.

Brown beef in a large skillet until no longer pink then drain and return to the skillet. Add taco seasoning and water then stir to combine. Place a lid on top of the skillet and turn heat to low and keep warm.

Melt butter in a very large skillet over medium-high heat and add frozen hash browns. Season with salt and pepper and cook until golden brown and crispy.

To assemble burritos: Lay four tortillas on a clean, dry surface then divide seasoned ground beef and potatoes between them. Top with toppings then roll and serve.
