Go Bold With Butter

If the thought of making homemade truffles sounds too intimidating, try your hand at making Brownie Truffles instead! Dense, rich, and fudgy, these two-bite desserts are made by rolling baked brownies into balls, then dipping them into melted chocolate. Totally decadent and impressive, yet fun and easy to make too!

Brownie Truffles
Yields 40 truffles


3/4 cup (1 ½ sticks) butter, melted
3/4 cup cocoa powder
1/4 cup vegetable or canola oil
2 cups sugar
3 eggs
1 teaspoon vanilla
1 cup flour
8 ounces semi-sweet chocolate baking squares
decorative sprinkles


Preheat oven to 350°F (or 325°F if using a glass baking dish).

In a large bowl, combine butter, cocoa powder and vegetable oil and whisk until smooth. Add sugar and whisk to combine. Add eggs and vanilla and whisk to combine. Add flour and mix until just combined. Pour mixture in a buttered 9×13-inch baking dish and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.

Cut the edges off the cooled brownies then fluff brownies with a fork. Using a cookie scoop, scoop 1 tablespoon brownie then roll between your hands to create a ball. Place on a parchment-paper lined baking sheet then continue with remaining brownies.

Melt chocolate in a large, microwave-safe bowl in 20 second increments, stirring between increments, until melted. Using tongs or two forks, dip each brownie ball into the melted chocolate then place back onto baking sheet. Continue with remaining brownie balls. Sprinkle tops with colored sprinkles and refrigerate until chocolate is hardened.

    I also made these truffles with 1/2 stick of butter,1 cup of crunchy peanut butter, and rice Krispies cereal about 2 cups,then melted chocolate over them and drizzled white chocolate like a design on top. Love chocolate!! LUL

      You need to break up the brownies to create the truffle filling.

    Having made truffles in the past and wanting to try these I’m wondering if freezing or refrigerating the brownie balls before dipping in chocolate would work? Thanks for the recipe!

      I’m going to make these and I am going to drizzle some khlua or bourbon over the brownie and then mold them. Maybe put some in with the chocolate coating too.

      These should be OK to freeze.

    Freeze the brownies only. If you freeze the chocolate that they are dipped in, it could change the color of the chocolate. It’s not very appealing to look at, but it tastes fine. I would freeze the balls and dip them just before serving. (44 years baking experience)
