Go Bold With Butter

Whenever I catch my husband pushing the roasted vegetables, corn, or mashed potatoes around his plate at dinner, I know it’s probably time to incorporate a new side dish into the mix.

Enter Buttered Orzo & Peas. This quick and easy side dish is made with common fridge and pantry staples like dried orzo, frozen peas, REAL butter, Parmesan cheese, and whatever type of milk you have on hand, and is an absolute hit whenever I serve it with dinner. The orzo is filling, the peas provide a nutritious boost, and the butter and cheese laced instant sauce is super satisfying.

Buttered Orzo & Peas
Serves 4-5


6 ounces dried orzo pasta
1 cup frozen peas
2 tablespoons butter
4 tablespoons Parmesan cheese, grated
1/4 cup milk or half & half


Cook orzo in a large pot of salted, boiling water according to package directions. Two minutes before the pasta finishes cooking, add in frozen peas and cook for 2 minutes. Drain and return to the pot.

Add butter, Parmesan cheese and milk to the pasta and peas. Stir until butter is melted and milk has thickened. Serve immediately.
