Smooth nutty Gouda cheese has an affinity for the sweetness of the sweet potato, and it melts like a dream, making it the perfect stuffing for these buttery paprika and garlic-infused potatoes that are perfect served alongside your next roast. If you like smoked cheeses, try using smoked Gouda for an extra burst of flavor.

Cheesy Hasselback Sweet Potatoes

Cheesy Hasselback Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes, scrubbed clean of any dirt
  • 4 medium cloves garlic, minced
  • 6 tablespoons butter, melted
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon regular or smoked paprika
  • 8 ounces regular or smoked Gouda cheese, thinly sliced
  • Optional garnishes: chopped scallions, sour cream

Directions

  1. Preheat oven to 400°F.
  2. Working one at a time, place sweet potato on flat surface with kitchen towel underneath to stabilize it while you slice it. Using large sharp knife, make slits in potato – about 1/4 inch apart – moving from one end to other, being sure not to cut all the way through bottom of potato.* Repeat with remaining potatoes.
  3. Place potatoes slit side up, into lightly buttered roasting pan with low sides.
  4. In small bowl, mix garlic, melted butter, salt, pepper and paprika, stirring until well combined. Using small spoon and your fingers, work melted butter mixture in between slits in potatoes, distributing it as evenly as possible.
  5. Place pan in preheated oven and bake until center of the potatoes are tender and outside is crisp, 50 minutes to 1 hour.
  6. If desired, about halfway through roasting time, remove the potatoes from the oven and run a fork very gently across the tops of the potatoes, just enough to fan the slices and separate them from one another.
  7. When potatoes are fully cooked, remove from oven and distribute Gouda evenly between slices of potato, stuffing it in between every few slices. Return potatoes to oven and cook just until cheese is melted, 3-5 minutes more.
  8. Garnish with green onions and sour cream, if desired.
  9. *For added insurance, grab a pair of chopsticks and place one on either side of the sweet potato before slicing into 1/8 inch slices. The chopsticks act as guides and prevent you from slicing through the entire potato.
