Caramel and cinnamon are a delicious combination and one that I don’t use nearly often enough. These sandwich cookies are a great way to enjoy those flavors.

The cookies are a simple vanilla cookie flavored with plenty of cinnamon, but the caramel-cream cheese frosting really ups the flavor ante for a delicious, rich cookie.

Cinnamon Caramel Sandwich Cookies

Yield: 18 cookie sandwiches

Cinnamon Caramel Sandwich Cookies

Ingredients

    Cookie Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Frosting Ingredients:
  • 8 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 1/2 cup store-bought caramel sauce
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

Preheat oven to 350°. Line baking sheets with silicone liners or parchment paper.

To make cookies, whisk together flour, cinnamon, baking powder and salt. Set aside.

Using electric mixer on medium speed, beat butter, sugar and brown sugar until light and fluffy. Add egg, mixing well. Mix in vanilla.

Reduce mixer speed to low. Gradually add flour mixture, mixing just until combined.

Drop dough by tablespoonfuls onto prepared pans. Flatten each cookie slightly.

Bake 12 to 16 minutes, or until edges are browned.

Cool on pans on wire rack for 10 minutes. Then, remove cookies to wire rack to cool completely.

To make frosting, beat cream cheese and butter with electric mixer on medium speed. When mixture is smooth, add caramel, vanilla and salt. Mix until combined.

Spread frosting on bottom of half of the cooled cookies. Top with remaining cookies so that bottoms of cookies face each other and frosting spreads just to edges.

If not serving immediately, refrigerate cookies. Remove from refrigerator about half an hour before serving.
