Cinnamon Apple Topped Sweet Potatoes

Cinnamon Apple Topped Sweet Potatoes

Ingredients

    For the whipped sweet potatoes
  • 2 1/2 pounds sweet potatos (about 5 large), baked, skin removed
  • 1/2 cup (1 stick) unsalted butter, plus extra for casserole, room temperature
  • 1 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pure orange extract
  • For the cinnamon apple topping:
  • 4 large Granny Smith apples
  • 1 cup granulated sugar
  • 1/2 cup apple juice
  • 3 tablespoons unsalted butter
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons light corn syrup
  • 5 teaspoons ground cinnamon
  • 1/2 teaspoon kosher salt

Directions

  1. Place baked sweet potato flesh in work bowl of electric mixer. Mixing on medium speed, add soft butter and brown sugar. Mix until well blended. Add vanilla, salt and orange extract. Scrape down sides of mixer. Mix on medium speed until potatoes are smooth and fluffy. Lightly butter casserole dish. Spoon sweet potato filling into casserole. Using knife or offset spatula, smooth sweet potato filling into even layer. Set casserole aside. At this point, casserole may be refrigerated and held for up to 2 days prior to baking.
  2. To finish casserole, preheat oven to 350°F. Peel and core apples. Cut into 1-inch chunks and place in medium sized bowl. Add vinegar and toss apples to coat evenly. Set apples aside.
  3. In large nonstick sauté pan, melt butter over medium heat. Add sugar, apple juice, corn syrup, cinnamon and salt. Stir mixture to blend. Add apples and stir. Raise heat to medium high. Cook apples, stirring frequently, for about 7 minutes. Apples should be just fork tender. Remove apple topping from stove and set aside to cool for 10 minutes.
  4. While apples are cooling, place sweet potato casserole in oven. Bake 10 minutes. Remove from oven. With slotted spoon, arrange the apples top of sweet potatoes in even layer. Pour remaining cinnamon glazed over top of apples. Return casserole to oven and bake an additional 20 minutes or until casserole is warmed through and glaze is bubbly around edges of casserole. Serve.
