When headed on a road trip this summer, you are bound to need a few snacks for the road. These mini muffins are perfect to bring a long! Their small size will prevent crumbs from spilling all over the car and, even the tiniest of hands in the back seat will be able to enjoy them.

Coconut Lime Mini Muffins

Makes Approximately 40 mini muffins


2 cups self rising flour
1/2 cup sugar
1 cup sweetened, coconut flakes

2 eggs
1 1/4 cup milk
1 stick unsalted butter, melted
1 teaspoon coconut extract
1 teaspoon vanilla extract
2 teaspoons lime zest

In a large bowl, add the dry ingredients. Stir.

In a medium-sized bowl add the wet ingredients. Stir. Pour the wet ingredients into the bowl of dry ingredients and stir until a uniform batter forms. Pour batter into greased mini muffin tins. Bake at 350°F for 15-20 minutes. Let cool and serve or store in a sealable container for your road trip.
