Go Bold With Butter

We all share the same story: Everyone is busy, busy, busy. Which is why so many of us crave simple, simple, simple. What can be simpler than butter and noodles?

Simple, yes. But this recipe is oh so much more than that. It’s a classic. My mom used to make this for our weeknight dinners at least once a week. Whether it was a side for chicken, pork chops or as a main dish with a big spoonful of marinara, it’s a recipe I still crave and keep in my rotating arsenal of family faves.

Easy Parmesan Noodles
Makes 2-4 servings


8 ounces fettuccine noodles
3 tablespoons butter
1 cup Parmesan cheese, grated
kosher salt and freshly ground black pepper
1 heaping tablespoon fresh parsley, chopped


Cook pasta in large pot of boiling, salted water, stirring occasionally, for about 8 minutes or until al dente.

Drain the pasta reserving ½ cup of the cooking water.

Add butter to still warm pot and melt over low heat. Turn off heat and add noodles to pot and toss with butter. Add Parmesan cheese and ¼ cup of cooking liquid at time as needed to moisten. Season with kosher salt and pepper and add parsley. Serve immediately.
