Grilled Baked Potatoes with Chive Butter

These grilled “baked” potatoes are a time saver and have incredible flavor thanks to a homemade chive butter.

Ingredients

  • 1/2 cup (1 stick) salted butter
  • 1/2 cup chopped chives
  • 2 garlic cloves, minced
  • 1 teaspoon coarse salt, divided
  • 1/2 teaspoon ground black pepper
  • 4 medium russet potatoes

Instructions

Step 1

To make the chive butter, combine butter, chives, garlic, 1/2 teaspoon salt and pepper in a medium bowl. Taste and adjust seasonings as needed. Place butter on plastic wrap and wrap to form a log; refrigerate at least 1 hour.

Step 2

To make the potatoes, use a sharp knife to cut the potato into thin slices about 1/4-inch thick, leaving about 1/2-inch at the bottom of the potato unsliced so the potato stays in one piece. Cut the chilled butter into thin slices and place one slice into each cut in the potato. Place potato in the center of a large square of aluminum foil and sprinkle with salt; wrap tightly in foil. Repeat with remaining potatoes.

Step 3

Preheat grill to medium high heat. Place potatoes over indirect heat and cook 45 minutes, rotating occasionally until cooked through. Serve with additional chive butter.
