Ham & Apple Butter Panini

Makes 4 sandwiches


8 slices sturdy bread, such as sourdough
4 tablespoons butter, room temperature
4 slices (about 1-ounce each) White Cheddar cheese
2-3 apples, such as Honey Crisp or Gala, thinly sliced
6-8 ounces deli ham, thinly sliced
½ cup apple butter


To assemble sandwiches, separate slices of bread into 4 pairs.

Generously butter one side of each slice of bread, and place butter side down on work surface. (This will be the outside of the sandwich.) On one slice of each pair, layer White Cheddar, apple slices and ham. On remaining slice of bread, spread generous layer of apple butter. Sandwich pairs together so buttered sides of bread are facing outward.

Warm cast iron skillet or grill pan over medium-high heat. Cook sandwiches, turning once, until both sides are golden and cheese is melted. Slice in half and serve immediately.
