Go Bold With Butter

Layer luscious homemade hot fudge sauce with cold vanilla ice cream and salty peanuts to create Hot Fudge & Peanut Parfaits – the ultimate, decadent dessert! This easy-yet-impressive recipe is made with fridge, freezer and pantry staples like butter, vanilla ice cream and salted peanuts, and will satisfy any craving for a sweet treat, STAT.

Hot Fudge & Peanut Parfaits
Makes 4 parfaits

Ingredients:

For homemade hot fudge sauce (makes 2 cups):
6 ounces semi-sweet chocolate
2/3 cup heavy cream
1/2 cup light corn syrup
1/4 cup brown sugar
1/4 cup unsweetened cocoa powder
pinch of salt
3 tablespoons butter
2 teaspoons vanilla

For parfaits:
4 cups vanilla ice cream, softened
1/2 cup salted peanuts

Directions:

To prepare hot fudge sauce, heat a medium-sized, heavy-bottomed saucepan over medium-high heat then add half the chocolate, heavy cream, corn syrup, brown sugar, cocoa powder, and salt. Bring to a boil while stirring constantly then turn heat down to medium-low and continue cooking and stirring for 5 minutes.

Remove pan from heat then add remaining chocolate and butter, and then stir until smooth. Add vanilla then stir to combine. Cool slightly before using or, using a funnel, pour hot fudge sauce into jars with tight-fitting lids and store in the refrigerator. Reheat in the microwave in 30-second intervals, stirring between intervals.

To assemble parfaits, layer 1/2 cup ice cream into the bottom of a wide-mouth mason jar or container. Drizzle in 2 tablespoons hot fudge sauce followed by 1 tablespoon peanuts. Repeat layers then serve immediately.
