Mini Sugar Cookie Fruit Pizzas take the concept of a summery, full-sized sugar cookie pizza swirled with fluffy cream cheese frosting and topped with yummy fresh fruit, and shrinks it down to a kid-friendly size. It’s a perfect project to encourage little ones to get involved in the kitchen, learn about fresh fruit, and get creative with designing their own mini fruit pizzas.

Prepare the sugar cookie dough and icing ahead of time, then get the kids involved by rolling and cutting out the cookies, baking them, then icing. Let each child pick out fresh fruits and berries of their choosing – like sliced strawberries, kiwis and blueberries – to colorfully dot the top.

Mini Sugar Cookie Fruit Pizzas
Makes 8-10 mini fruit pizzas


1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
Strawberries, sliced
Kiwi, peeled and sliced

For the icing:
7oz marshmallow creme
8oz 1/3 less fat cream cheese, softened
2 teaspoons lemon juice


Mix together flour, baking soda and salt in a bowl, then set aside. Place softened butter and sugar in the bowl of your electric mixer, and beat until light and fluffy, about 2 minutes. Add egg and vanilla extract, then beat until combined.

Add dry ingredients to the wet ingredients in 3 batches, mixing until just combined before adding the next batch. Wrap dough in plastic wrap, then chill in the refrigerator for 1 hour or until very firm.

Preheat oven to 350°F. Heavily flour a clean, dry surface, then place chilled dough on top. Generously sprinkle the top of the dough with more flour, then roll out to 1/4”-1/3” thickness. Cut out cookies with a round cookie cutter and place on a parchment paper-lined baking sheet. Bake for 8 minutes (cookies will not be golden brown when done.) Let cookies rest on the baking sheet for 2 minutes, then remove to a cooling rack to cool completely.

For the icing:
While the cookies are baking, spoon marshmallow creme into a large, microwave-safe bowl, and microwave for 20 seconds. Stir in softened cream cheese and lemon juice until very smooth. Refrigerate for 30 minutes.

Once cookies are completely cool, spread with chilled icing, then top with sliced strawberries, kiwi and blueberries. Store leftover mini sugar cookie fruit pizzas in the refrigerator.
