Mixed Berry Cobbler

It’s always exciting to watch the local markets’ fruit selections change with the seasons. The appearance of berries is a sure sign of impending summer.

This cobbler celebrates the season with a combination of berries. Choose your favorite berries, or just stick to one. You never have to make this dessert the same way twice!

I like to use a combination of strawberries, raspberries and blueberries. If you use any larger berries, such as strawberries, I recommend chopping them to blueberry-sized pieces.

If you’re feeding a crowd, this recipe is easily doubled to be made in a 9”x13” dish.

Mixed Berry Cobbler

Serves 4-5


3 cups assorted berries (strawberries, raspberries, blueberries, etc.)
1/2 tablespoon lemon juice
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup packed light brown sugar
1 teaspoon vanilla extract


Preheat oven to 375°F. Grease a 9”x6” rectangular or 8” round baking dish.

Place berries in bottom of prepared pan. Drizzle with lemon juice.

In a small bowl, whisk together flour, baking powder and salt. Set aside.

In a medium bowl, beat butter, brown sugar and vanilla until well-blended. Mix in dry ingredients until mixture resembles crumbs. Drop or sprinkle dough evenly over top of berries.

Bake 30 minutes, or until top is lightly browned and fruit is bubbly.

    Having researched a lot of cobbler recipes, I like this best.The rest have the classic bisquit toppings, and I like them, but I wanted to try this crumbly, streusel-like topping. It was wonderful! Different than the others.
