Orange-studded Mascarpone cheese is at the creamy center of this French toast, with a layer of fresh blackberries cooked in butter, sugar and another layer of orange flavor to create lush syrup.

Orange Blackberry French Toast
Makes 4 servings


For the French toast:
4 slices Texas Toast
4 ounces Mascarpone cheese
2 tablespoons orange zest, divided
1 tablespoon sugar
2 eggs
1/4 cup half & half
1 tablespoon butter
1 teaspoon vegetable oil

For blackberry compote:
4 tablespoons butter
1/4 cup sugar
1/4 cup orange juice
1 cup fresh blackberries


To make the French toast:

Cut Texas Toast pieces in half diagonally. In small bowl mix Mascarpone cheese, 1 tablespoon orange zest and sugar until well blended. Slather mixture on one side of each piece of Texas Toast and combine two pieces to form sandwich with Mascarpone mixture on inside.

Whisk eggs, half & half and remaining orange zest together in shallow bowl.

Heat a large non-stick skillet to medium high and melt butter with oil. Dip sandwich halves in egg mixture, coating all sides and edges Place in skillet, cooking largest sides first then turning on edges of sandwich and cooking each side until golden. Serve with blackberry compote.

To make the blackberry compote:

Melt butter in small saucepan. Add sugar and orange juice and stir until sugar dissolves. Add blackberries and cook for 3 minutes until blackberries begin to break down, stirring occasionally. Keep warm over low heat until ready to serve.
