When the summer is full swing, my favorite activity is heading to my local farmers’ market. You never know what glorious treasures you are going to find. Blueberries, raspberries, strawberries, peaches, plums and gorgeously ripe, red, cherries. Each perfect and delicious on their own. But, when baked into a buckle, a perfect summer fruit shines even brighter. This recipe is my go-to summer buckle recipe. The batter is always the same, but you can use any fruit that you like. I have made this many, many times, and am always asked for the recipe.

This recipe is so simple. It uses pantry staples, and can be whipped up before you sit down for dinner. By the time you clear the plates, you have a golden brown fruit-studded delight waiting for you. It is heavenly on its own, but whipped cream or some vanilla ice cream just sends it over the top.

Strawberry Buckle

1/2 cup (1 stick) butter, room temperature
1 cup sugar
3 eggs
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
zest of one lemon
1 pound strawberries, trimmed and sliced


Preheat oven to 350°F.

Cream together butter and sugar in the bowl of an electric mixer until light and fluffy, about 3 minutes. Add the eggs one at a time until fully incorporated. Add the vanilla. Add flour, salt, baking powder and lemon zest.

Add the strawberries to a buttered 2-quart baking dish. Cover with batter.

Bake for 45 to 50 minutes. Cool for 15 to 20 minutes before serving.

Use softened butter for cookies and cakes.
