By the time October rolls around, Halloween candy abounds. Stores shelves are overflowing with all kinds of goodies. We each have our own childhood favorites. While most of us certainly enjoy eating the candy all on its own, sometimes it is nice to incorporate the candy into something a little more fun and festive.

Cheesecake is a major weakness of mine and it’s hard to resist in any form. This no-bake version is made with Greek yogurt for a lighter rendition of the classic we know and love. Not only it this lightened up it is incredibly easy. Layering chopped up candy of your choice with a graham cracker crust and rich, creamy cheesecake in small jars or other individual sized dishes makes for a fun personalized dessert.

This would be fun project to put together with kids, or to surprise them with. For best results, assemble no more than a few hours before serving so the candy retains its texture.

Trick or Treat Mini Cheesecakes

Makes about 12 mini cheesecakes


For the graham cracker base:

1 ¼ cups graham cracker crumbs
2 tablespoons granulated sugar
4 tablespoons unsalted butter, melted

For the cheesecake layer:
8 ounces cream cheese (reduced fat is fine)
2 cups low-fat Greek yogurt
1½ cups confectioners’ sugar, sifted
1 teaspoon vanilla
1 tablespoon heavy cream

For layering:
Halloween candy of your choice, chopped if necessary


Set out 12 mini mason jars (small glasses will also work). In a small bowl, combine the graham cracker crumbs, sugar and butter. Stir with a fork until evenly combined. Scoop about 1½-2 tablespoons of the mixture into the bottom of each jar and tamp down gently with the bottom of a small glass.

To make the cheesecake mixture, combine the cream cheese and Greek yogurt in the bowl of an electric mixer. Beat the mixture on medium-high speed until smooth, about 1-2 minutes. Add in the confectioners’ sugar and mix until well incorporated, 1-2 minutes. Blend in the vanilla and heavy cream on low speed, then increase the speed to medium-high and beat until light and fluffy, 2-3 minutes more.

Spoon some of the cheesecake mixture into each jar to make a thin layer over the crust. Add a thin layer of candy over the cheesecake mixture in each jar. Fill the jars just below the edge with the remaining cheesecake mixture. Top each serving with additional candy for garnish. Cover and chill. Serve within a few hours.
