I love to entertain when the weather starts to warm up. Al fresco dinners on the porch, Sunday brunches, baby and bridal showers, any excuse to share a meal with family and friends. I like to have a few recipes in my back pocket that are simple to make, use the best that the season has to offer, and look impressive. This tart fits the bill. It is as beautiful as it is delicious.

This crust is incredibly versatile. It is a slightly sweet, buttery crust that is incredibly forgiving. This crust makes enough for 2 (9-inch) tarts or 12 individual ones. If I have extra dough, I like to freeze half and keep it for another day.

White Chocolate Berry Tart
By Bree

2 1/4 sticks butter, room temperature
3/4 cup + 2 tablespoons sugar
2 eggs
3 3/4 cups flour
1/4 teaspoon salt
1/2 cup heavy cream
8 ounces white chocolate, chopped
1/2 teaspoon vanillawhite-chocolate-berry-tart_small
Zest from one lemon
2 cups Mascarpone cheese
2 pints fresh berries

To make crust, add butter and sugar to bowl of stand mixer. Mix until combined, about 1 minute. Add eggs and continue to mix for another minute, scraping bottom. Add flour and salt and mix until dough is smooth and comes together. Divide dough in half, wrap in plastic wrap and chill for 2 hours.

Roll dough out to fit tart pan on lightly floured board. Transfer dough into tart pan. If it should break or tear, patch it up with extra pieces. Freeze for 15 minutes. Preheat the oven to 350°F. Bake shell until light golden brown, about 18 to 20 minutes. Let cool completely.

To make filling, heat cream and white chocolate over low heat. Stir until melted and smooth. Take off heat and whisk in vanilla, lemon zest and Mascarpone cheese. Pour into cooled shell. Chill until set.

Arrange berries on top. Dust with powdered sugar.

Am I to assume that the flour is “all purpose?” To some this may be an obvious choice, but I do not assume anything.
