Veggies and fruits, together!?! It’s a little unusual, but it totally works. The watermelon adds a mellow sweetness to the zucchini. A toss of fresh mint and a squirt of lime add a zing to both ingredients, making it a decidedly delicious accompaniment to a dinner of fish or chicken.

Zucchini and Watermelon Sauté
Serves 4


2 tablespoons butter, divided
2 cups zucchini, sliced into rounds
1/4 cup white wine
1/4 cup chicken or vegetable stock
1 cup watermelon, large dice
Small bunch fresh mint leaves
½ lime
Salt and pepper


In a large sauté pan over medium-high heat, melt 1 tablespoon butter. Add zucchini and cook for 4-5 minutes or until al denté.

Add wine and stock and cook for 3-4 minutes. Add watermelon and cook for 3 more minutes until sauce is reduced. Add remaining tablespoon of butter to thicken sauce, toss in mint and a squeeze of lime. Add salt and pepper to taste and serve.
