This Apple & Gouda Tart is part of a feature on homemade puff pastry here at Go Bold With Butter. As always, homemade just tastes better, but you are welcome to use any store-bought all-butter puff pastry if you are running short on time. This tart is the perfect appetizer or light dinner for all of your fall occasions. Apples, shallots, earthy herbs, and delicious, creamy gouda top a flaky puff pastry crust with just a little kick from spicy mustard. Serve with a crisp glass of wine.

Ingredients

  • 2 tablespoons butter
  • 3 shallots, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons fresh thyme
  • 1 sheet all-butter puff pastry, thawed (or make your own: http://goboldwithbutter.com/?p=5776)
  • 1/3 cup spicy mustard
  • 1 tart apple (Golden Delicious or Pink Lady), thinly sliced
  • 1 1/2 cups grated gouda cheese

Instructions

Step 1

Preheat oven to 400°F.

Step 2

In medium sauté pan, melt butter over medium heat. Add shallots and cook until soft, about 10 minutes. Season with salt and pepper. Remove from heat, add rosemary and thyme.

Step 3

Roll out puff pastry to approximately 9x12 inches on floured board. Transfer to baking sheet lined with parchment paper. About 1/2 inch from edge, use fork to prick the puff pastry.

Step 4

Brush the mustard evenly over the puff pastry, avoiding the edges. Top with shallot mixture and apple slices. Cover with shredded gouda cheese.

Step 5

Bake for 15 to 20 minutes, or until puff pastry is golden brown and cheese is melted.
