Cake Batter Bars

Sprinkles can make the anyone’s day turn around! These bars are fun and colorful and taste like a cupcake. The Cake Batter Bars are great on their own, but the cake batter-flavored frosting takes them over the top. For easy slicing, chill the bars completely and use a very sharp knife. Clean the knife as needed before making more slices to ensure clean edges.

Ingredients

  • For the Cookies:

  • 1/2 cup (1 stick) butter, room temperature
  • 1/2 cup sugar
  • 1 cup brown sugar, lightly packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 cup yellow cake mix
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sprinkles
  • For the Frosting:

  • 1 cup (2 sticks) butter, room temperature
  • 1 cup yellow cake mix
  • 2 cups powdered sugar
  • pinch salt
  • 2 teaspoons vanilla
  • 2-3 tablespoons heavy cream
  • sprinkles for decorating

Instructions

For the Cookies:

Preheat oven to 350°F. Line 9x13-inch cake pan with parchment paper, butter and set aside.

3 minutes. Add eggs and vanilla; mix until combined. Add flour, cake mix, baking powder and salt; mix until combined. Stir in sprinkles.

Spread batter evenly in prepared pan (dough will be sticky, dip your hands in water and press if needed). Bake 22 to 24 minutes or until lightly brown. Remove from oven and let cookie bar cool completely in pan.

For the Frosting:

Cream butter in bowl of electric mixer until pale in color. Add cake mix and one cup powdered sugar. Beat 3 minutes, then add remaining powdered sugar and salt. Beat until light and fluffy. Add heavy cream to get desired consistency.

Spread frosting evenly over cooled bars and top with sprinkles.
