Yield: 4 servings

Baked Egg Boats


  • 1 baguette, cut into 4 pieces
  • 4 tablespoons butter, room temperature
  • 4 eggs
  • flaked sea salt
  • ground black pepper
  • 2 tablespoons flat leaf parsley, chopped


  1. Preheat oven to 350°F. Line baking sheet with parchment paper or foil. Set aside.
  2. Cut an oval into the top of each baguette piece. Scoop out enough bread dough to make a large hole, being careful not to hollow out bottom.
  3. Spread butter on bottom and up sides of hollowed-out section. Crack egg into each baguette piece. Season with salt and pepper.
  4. Bake for 15 to 20 minutes, or until eggs are set to desired stage. Sprinkle with parsley and serve immediately.
