Buttery Shrimp Pasta

Yield: 4 servings


  • 5 slices bacon
  • 3 tablespoons butter, divided
  • 1 pound frozen shrimp, thawed, peeled and deveined
  • Salt to taste
  • 1/2 cup sun-dried tomatoes (in oil)
  • 2 cups curly pasta
  • 6 ounces shredded cheddar cheese
  • Juice from half a lemon
  • freshly chopped parsley, for garnish


  1. Cook pasta according to package directions until al dente, reserving 1/2 cup of pasta water.
  2. Meanwhile, cook bacon in a large skillet until crispy. Remove bacon to a paper towel-lined plate; crumble once cooled. Pour out most of the bacon grease, reserving about 1 teaspoon in the pan. Add 2 tablespoons butter; cook over medium heat until melted.
  3. Add shrimp; season with salt. Sear 2 minutes on each side; remove shrimp from pan and set aside.
  4. Add sun-dried tomatoes to the skillet and sauté 30 seconds. Stir in cooked pasta and reserved pasta water. Cook, stirring occasionally, until the pasta absorbs the water and thickens.
  5. Add cheese and stir until smooth. Add remaining 1 tablespoon of butter and stir to incorporate. Stir in shrimp and bacon. Add lemon juice and garnish with parsley.
