A childhood classic treat gets transformed into a delicious cookie bar. Peanut butter cookie base mixed with peanut butter chips, mini marshmallows and salted butter crackers. It’s salty and sweet and you need them now!

Fluffernutter Cookie Bars

Total Time: 50 minutes

Yield: 15 bars


  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup peanut butter
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter chips
  • 1 cup crushed up salted butter crackers, divided
  • 1 cup mini marshmallows, divided


  1. Preheat oven to 350 degrees F. Line a 9x13-inch baking pan with parchment paper; grease and set aside.
  2. In a medium bowl, combine flour, baking powder and baking soda. Set aside.
  3. Cream together butter, peanut butter and sugar in large bowl until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla. Add dry ingredients and stir until just combined. Add peanut butter chips, ½ cup crushed butter crackers, and ½ cup marshmallows and fold until evenly combined.
  4. Transfer mixture to prepared baking pan and spread into an even layer. Top with remaining crushed crackers. Bake until golden brown and almost completely set in the center, about 30 to 35 minutes.
  5. Remove from oven and immediately top with remaining marshmallows. The heat will slightly melt them in place. Let cool completely before slicing and serving.
