Ooey-Gooey Lava Cakes

Ingredients

  • 5 tablespoons unsalted butter, plus more, softened, for greasing ramekins
  • 1/4 cup granulated sugar, plus more for dusting ramekins
  • ¼ cup heavy cream
  • 1 ¼ cups bittersweet chocolate, divided
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons all purpose flour
  • Powdered sugar and fresh berries for serving

Instructions

Step 1

Heat oven to 425°F. Grease 1-cup ramekins with butter and dust lightly with sugar. Place onto a rimmed baking sheet.

Step 2

Heat heavy cream in a small saucepan until boiling. Pour boiling cream over 1/2 cup chocolate in a small bowl and let sit 3 minutes. Stir until chocolate is melted and smooth. Refrigerate for 30 minutes.

Step 3

Combine butter and remaining chocolate in a small bowl and melt over a double boiler. Alternatively, microwave in 30-second intervals until melted, stirring in between.

Step 4

Beat eggs, egg yolks, sugar, salt and vanilla in a medium bowl until light and frothy, 5-7 minutes. Gently fold in chocolate mixture. Add flour and fold to incorporate.

Step 5

Divide half of the batter between ramekins. Add 1/2 tablespoon of chilled ganache to center. Top with remaining batter.

Step 6

Bake for 10-12 minutes, until edges are firm and top is just set. Run a knife around edges and let cool 1 minute. Invert each ramekin onto a plate. Dust with powdered sugar and serve with fresh berries.
