One of my favorite memories from childhood is packing up the stash of homemade treats we would take with us on road trips. Sometimes, we barely got out of the driveway before the good stuff came out.
These little cookies feature all the things we love about chocolate chip cookies in a bite-size form. Lots of chewy cookie enveloping chocolate chips and toasted nuts. Just don’t be surprised if they don’t last that long.
Chocolate-Chip Cookie Bites

Makes 4 dozen cookie bites
Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup chopped pecans, toasted
1 cup miniature chocolate chips
Directions:
Preheat oven to 350°F. Place paper liners in mini muffin pans.
In a medium bowl, whisk together flour, baking powder and salt. Set aside.
In a large bowl, beat butter and brown sugar until fluffy. Add eggs, one at a time, mixing well after each addition. Mix in vanilla. Gradually add flour mixture, mixing just until combined. Stir in pecans and chocolate chips.
Place about 2 teaspoons dough in each lined muffin cup. Bake 10-12 minutes or until lightly browned and cookies are set. Cool in pans on wire racks.

Is this photo incorrect? How can two teaspoons of a batter turn into a full liner of what looks like a muffin? Am i missing something here?

The photo is correct. These are mini muffins.
Mini muffins are about 1.5″, correct? They are also know as petit four cups. There are 100 per package in the ones I have. That is a common size liner that can be purchased at most kitchen stores. I’ve purchased mine at Sur La Table.

The mini muffin pans are wonderful…I buy my mini liners at Wal-mart. I also use them for Christmas candies

This will an awesome treat to make and take in our motorhome when we travel and camp..I’m wondering…ig I spray my muffin pan will I have to use the paper cups…I’m not a fan of the paoer cups. I don’t use them with cupcakes and they turn out fine. Thanks for the recipe
We recommend liners for the best results. If you don’t use them, be sure to grease the muffin tin very well.
