Pumpkin Popcorn Balls

Makes 7 popcorn balls
Ingredients:
9 cups popped popcorn
1 cup granulated sugar
1/3 cup light corn syrup
1/3 cup water
1 teaspoon white vinegar
1/2 teaspoon salt
Red & yellow food coloring
1/2 teaspoon vanilla
4 tablespoons butter, cut into cubes
7 mini chewy chocolate candies
Sour green apple straws
Directions:
Butter a large bowl. Place popcorn in bowl and set aside. Separately, lay out a sheet of waxed paper for the finished popcorn balls to cool on.
Add sugar, corn syrup, water, vinegar and salt to a medium-sized saucepan. Add food coloring a few drops at a time until mixture is orange. Turn heat to medium-high, bring mixture to a boil, then cook until mixture reaches 250°F on a candy thermometer. Turn the heat off then stir in the vanilla and butter until smooth.
Carefully drizzle mixture over popped popcorn then toss with a large spatula until popcorn is thoroughly coated. When cool enough to handle, about 2-3 minutes later, press popcorn into baseball-sized balls. Press onto wax paper to create a flat bottom then make a small indentation in the top with your thumb. Cool completely. Once cool, place mini chewy chocolate candies in the indentation to mimic a stem and coil a small piece of sour green apple straw to mimic a leaf. Store in an airtight container on the counter for up to 3 days.
