How To Create A Choux Pastry

Choux batter is used in many kinds of French-inspired recipes including eclairs, cream puffs, beignets, gnocchi and more. It is made with only a few simple ingredients: butter, water, flour and eggs. Choux pastry batter is cooked on the stove, creating a batter that has a dough-like consistency. The butter gives the final product a fluffy, golden crust and rich flavor!

Step 1: Boil

Add water and butter to a saucepan and bring to a boil over medium-high heat; cook until the butter is completely melted.

Step 2: Add Flour

Gradually add the flour and stir vigorously until a smooth ball of dough forms. Keep the pan over the heat and cook a minute or two more to cook the flour.

Step 3: Beat In Eggs

Remove the pan from the heat and beat in the eggs, one at a time, until the dough becomes creamy. You can also use a stand mixer to make this step easier.

Step 4: Spread Into Pan & Bake

Spread the pastry into a baking dish to create the base of a delicious cream puff cake, pipe into small balls to create mini eclairs or get creative and make your own pastry shape before baking the dough until puffed and golden.
