Buttery Shrimp Pasta

Ingredients
- 5 slices bacon
- 3 tablespoons butter, divided
- 1 pound frozen shrimp, thawed, peeled and deveined
- Salt to taste
- 1/2 cup sun-dried tomatoes (in oil)
- 2 cups curly pasta
- 6 ounces shredded cheddar cheese
- Juice from half a lemon
- freshly chopped parsley, for garnish
Instructions
Step 1
Cook pasta according to package directions until al dente, reserving 1/2 cup of pasta water.Step 2
Meanwhile, cook bacon in a large skillet until crispy. Remove bacon to a paper towel-lined plate; crumble once cooled. Pour out most of the bacon grease, reserving about 1 teaspoon in the pan. Add 2 tablespoons butter; cook over medium heat until melted.Step 3
Add shrimp; season with salt. Sear 2 minutes on each side; remove shrimp from pan and set aside.Step 4
Add sun-dried tomatoes to the skillet and sauté 30 seconds. Stir in cooked pasta and reserved pasta water. Cook, stirring occasionally, until the pasta absorbs the water and thickens.Step 5
