Buttery Shrimp Pasta

- 5 slices bacon
- 3 tablespoons butter, divided
- 1 pound frozen shrimp, thawed, peeled and deveined
- Salt to taste
- 1/2 cup sun-dried tomatoes (in oil)
- 2 cups curly pasta
- 6 ounces shredded cheddar cheese
- Juice from half a lemon
- freshly chopped parsley, for garnish
Step 1Cook pasta according to package directions until al dente, reserving 1/2 cup of pasta water.
Step 2Meanwhile, cook bacon in a large skillet until crispy. Remove bacon to a paper towel-lined plate; crumble once cooled. Pour out most of the bacon grease, reserving about 1 teaspoon in the pan. Add 2 tablespoons butter; cook over medium heat until melted.
Step 3Add shrimp; season with salt. Sear 2 minutes on each side; remove shrimp from pan and set aside.
Step 4Add sun-dried tomatoes to the skillet and sauté 30 seconds. Stir in cooked pasta and reserved pasta water. Cook, stirring occasionally, until the pasta absorbs the water and thickens.
Step 5Add cheese and stir until smooth. Add remaining 1 tablespoon of butter and stir to incorporate. Stir in shrimp and bacon. Add lemon juice and garnish with parsley.
