As always, homemade just tastes better, but you are welcome to use any store-bought all-butter puff pastry if you are running short on time. A fun twist on the classic pot pie, this stew is rich and decadent. Puff pastry dipping crackers replace a heavy crust and can be made using a cookie cutter or cut into strips. Whatever the shape, they add crunch and flavor to a hearty stew.

Ingredients

  • For the Crackers:

  • 2 sheets all-butter puff pastry, thawed
  • 1 egg, beaten
  • 1 tablespoon seafood seasoning
  • For the Stew:

  • 8 tablespoons butter
  • 1 large onion, chopped
  • 4 carrots, peeled and diced
  • 3 stalks celery, chopped
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 1/4 cup sherry
  • 1/4 cup flour
  • 3 cups seafood stock
  • 1/4 cup heavy cream
  • 1 cup frozen peas
  • 1 pound cooked lobster, chopped
  • 1/4 cup chopped flat leaf parsley
  • 2 tablespoons chopped fresh chives

Instructions

Step 1

Preheat oven to 350°F.

Step 2

Line baking sheet with parchment paper. Roll out puff pastry on floured board. Use cookie cutter or sharp knife to cut out desired shapes. Brush with beaten egg and sprinkle with seafood seasoning. Top with an additional piece of parchment and add baking sheet on top to weight down the puff pastry. Bake for 30 minutes or until puff is crisp and golden brown. Set aside.

Step 3

In Dutch oven, melt butter over medium heat. Add onions, carrots and celery. Cook until vegetables are soft, about 10 minutes. Season with salt and pepper. Add sherry and let cook for another 2 minutes.

Step 4

Add flour and cook for 2 minutes, stirring. Add stock and let simmer for 5 minutes. Add the cream. Stir to combine.

Step 5

Add frozen peas, lobster, parsley, and chives. Heat through. Check for seasoning and adjust as needed.

Step 6

Ladle into bowls and serve with puff pastry dipping crackers. Garnish with more chopped parsley and chives.
