Chocolate Monster Cookies

Makes 2 dozen cookies

1 1/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups old-fashioned oats
1 cup semisweet chocolate chips
1 cup peanut butter chips
1 cup coarsely chopped unsalted or lightly salted cashews

Preheat oven to 350°F. Grease or line baking sheets with parchment paper.

In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

Using an electric mixer, beat butter in a large bowl until smooth. Add sugar and brown sugar, and mix until combined. Add eggs, one a time, mixing well after each addition. Mix in vanilla.

Gradually add flour mixture, mixing until just combined. Do not over mix. Stir in oats, chocolate chips, peanut butter chips, and cashews.

Drop dough by 1/4-cup portions onto lined baking sheets. Place cookies about 3 inches apart.

Bake, one pan at a time, for 12-14 minutes. Let cool for 1-2 minutes on baking sheets. Then, transfer to wire racks to cool completely.

    Made these with 1 cup coconut, 1 cup butterscotch chips, 1 cup chocolate chips as a nut-free treat for my son’s class. They are so delicious! I will make again.
