Peanut Butter Cookies

Makes about 3 1/2 dozen cookies

1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar, plus more for sprinkling tops of cookies
1/2 cup packed light brown sugar
1 cup smooth peanut butter
1 large egg
1 teaspoon vanilla extract

Preheat oven to 350°F. Grease or line baking sheets.

Whisk together flour, baking powder, baking soda, and salt in a medium-sized bowl. Set aside.

Using a handheld mixer, beat butter, sugar, and brown sugar just until smooth. Add peanut butter and mix just until blended. Add egg and vanilla and mix just until blended.

Gradually add flour mixture, mixing just until blended.

Using a cookie scoop, place tablespoonful-sized balls of dough onto prepared pans. Using a fork, lightly make a crisscross pattern on top of each cookie. Be careful not to over-flatten the cookies. Sprinkle each cookie lightly with sugar.

Bake cookies, one pan at a time, 14-16 minutes, or until lightly browned. Refrigerate remainder of dough until ready to bake. Cool cookies on pan on wire rack for about 5 minutes. Then, transfer from pan to wire rack to cool completely.

    Most peanut butter cookies I try just do not have enough peanut butter flavor for my taste. These are bursting with peanut butter flavor and oozing with buttery goodness. I used Planters Crunchy Peanut Butter. I didn’t soften my butter and I mixed everything in my Kitchen Aid stand mixer. I baked the first cookie sheet batch for 14 minutes per the directions and that was a bit too long for my oven. I did bake the remaining batches for 12 minutes. They turned out much better and even less time may have improved them. I like to bake my cookies until they look slightly underbaked, they will continue baking once pulled from the oven. Thanks for the yummy recipe!
