Growing up we always had a dedicated evening set aside as a family to frost sugar cookies cut out into holiday shapes. None of us were very good at decorating, and sometimes the cookies got a little burned, but we always had a great time.

I have much better skills decorating with frosting than I used to, but I’m still not that great. I’ve just learned a few easy tricks over the years to help me look like a pro: I always sift my powdered sugar so my frosting is smooth and lump-free, I use gel food coloring (instead of liquid) to get vibrant colors, and I decorate with a piping bag and tip.

I like the twist of frosting fudgy brownies instead of traditional sugar cookies. It’s a fun change everyone will love. And as an added bonus, there are brownie scraps to snack on during decorating!

Frosted Brownie Cut-Out Cookies

Makes 2 dozen cookies

Ingredients:

For the brownies:
1 cup (2 sticks) unsalted butter, cut into cubes
6 ounces bittersweet chocolate, chopped (or use chips)
1 1/2 cups granulated sugar
1/4 teaspoon salt
4 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

For the frosting:
1 cup (2 sticks) unsalted butter
4 cups powdered sugar, sifted
Pinch salt
2 teaspoons vanilla extract
2-5 tablespoons milk
Food coloring, as desired
Sprinkles, as desired

Directions:

To make brownies, preheat oven to 350°F. Butter 9×13-inch baking dish or line with parchment paper.

In saucepan set over low heat, melt butter and chocolate. Stir until smooth. Remove from heat and add sugar and salt. Add eggs one at a time, mixing after each. Stir in vanilla extract. Add flour and stir until just combined.

Pour batter into prepared baking dish and bake until edges are set, about 30-35 minutes. Let cool completely.

To make frosting, in bowl of stand mixer fitted with paddle attachment, or in bowl with hand mixer, beat together butter, powdered sugar, salt and vanilla extract until smooth. Add milk 1 tablespoon at a time, mixing after each addition, until frosting is right consistency. Color as desired with food coloring.

To make cookies, use cookie cutters to cut brownies into desired shapes. Decorate with frosting.
