With all of the family and friend gatherings around the holidays, it is a good idea to have a clutch recipe in your back pocket – and it's a bonus if the recipe is also festive. This flavorful eggnog coffee cake with a delicious streusel topping meets both criteria - and it's pretty, too!

Ingredients

  • For the cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon grated nutmeg
  • 1/4 teaspoon ground cinnamon
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 1/4 cup eggnog
  • 1 tablespoon dark rum, optional
  • For the topping:

  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon grated nutmeg
  • Pinch of ground cinnamon
  • 6 tablespoons unsalted butter, cold and cut into cubes

Instructions

For the cake:

Step 1

Heat oven to 350?F. Butter a 9 x 9-inch baking pan.

Step 2

In medium bowl, combine flour, baking powder, salt, nutmeg and cinnamon. Whisk to blend.

Step 3

In bowl of electric mixer, combine butter and sugar. Beat on medium-high until light and fluffy, 2-3 minutes. Scrape down sides of bowl. Blend in eggs one at a time, mixing well after each addition.

Step 4

With mixer on low speed, alternately add dry ingredients and eggnog, beginning and ending with dry ingredients and mixing each addition only until just incorporated. Blend in dark rum, if using.

Step 5

Spread batter into prepared pan.

For the topping:

Combine flour, sugar, nutmeg and cinnamon in medium bowl. Add in butter pieces and toss with dry ingredients. Work together with your fingertips or pastry cutter until mixture is crumbly. Sprinkle streusel evenly over cake batter in prepared pan.

Step 7

Bake for 40 minutes, rotating halfway through baking time, until top is golden brown and center is just set. Remove to wire rack to cool before slicing and serving.
