Asparagus Crostini with Butter Sauce

Ingredients

  • 1 bunch asparagus, cut into 2-inch pieces, tough ends discarded
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 small baguette, cut into 1/2-inch slices
  • 1 8-ounce wheel brie, at room temperature, sliced thin
  • 3 tablespoons butter, melted
  • Juice from half a lemon
  • 1 tablespoon lemon zest
  • 1 clove garlic, minced
  • 1/2 cup thinly sliced almonds, lightly toasted

Instructions

Step 1

Preheat oven to 350 degrees F.

Step 2

Arrange asparagus on a baking sheet and drizzle with olive oil. Lightly season with salt; bake 20 minutes.

Step 3

Remove asparagus from baking sheet and set aside. Place baguette slices on baking sheet; top each with 2 slices brie; bake 10 minutes or until cheese has softened.

Step 4

Meanwhile, combine butter, lemon juice, lemon zest, and garlic in a small bowl; season with salt.

Step 5

Arrange four asparagus stems on each crostini and drizzle with garlic butter sauce. Top with the toasted almonds and serve immediately.
