Ingredients

  • 1/2 cup (1 stick) salted butter
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1 cup peeled, diced apples
  • Frosting

  • 1/4 cup unsalted butter
  • 4 ounces cream cheese, room temperature
  • 1 1/2 cups powdered sugar, sifted
  • 1 teaspoon vanilla

Instructions

Step 1

Preheat the oven to 350°F. Line an 8 x 8-inch baking pan with parchment paper and set aside.

Step 2

Melt butter for both blondies and frosting in a saucepan over medium heat. Cook until the butter foams and steams. Swirl the pan as the foam subsides and closely watch as the butter turns golden brown and solids form. Set aside 4 tablespoons for frosting; cool completely. Pour remaining brown butter into a large mixing bowl and cool for about 15 minutes. Do not let solidify.

Step 3

Add brown sugar to cooled brown butter; stir until mixed. Add egg and vanilla extract; stir vigorously until completely smooth.

Step 4

Add flour and cinnamon; mix just until batter is smooth and well combined. Fold in apples.

Step 5

Spoon batter into prepared pan and bake 25-28 minutes. Let cool completely.

Step 6

Meanwhile, make the frosting. Add reserved brown butter to a large mixing bowl. Add cream cheese, powdered sugar and vanilla; whip until smooth and creamy. Spread evenly over cooled blondies.
