Brown Butter Sweet Potato Pie Cookies

These delicious brown butter sweet potato cookies bring in flavors of a classic sweet potato pie all in a brown butter thumb print cookie, making it the perfect addition to any holiday cookie plate.

Ingredients

  • Cookie

  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Sweet Potato Filling:

  • 3 ounces cream cheese, softened
  • 1 cup cooked sweet potato
  • 1/4 cup sweetened condensed milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

Step 1

Melt butter in a saucepan over medium heat. Cook until the butter foams and steams. Swirl the pan as the foam subsides and closely watch as the butter turns golden brown and solids form. Remove from heat and let cool.

Step 2

Meanwhile, combine the sweet potato filling ingredients in a medium bowl until thoroughly mixed. Set aside.

Step 3

Heat oven to 350°F. Line a cookie sheet with parchment paper.

Step 4

Mix together brown butter, sugar and powdered sugar in a stand mixer or large bowl until light and fluffy.

Step 5

Add egg and vanilla extract, mix thoroughly to combine.

Step 6

Whisk flour, baking powder and salt in a small bowl. Add to wet ingredients and mix just until combined.

Step 7

Scoop dough into 1 tablespoon-sized portions and roll into a ball. Place on a baking sheet, 2 inches apart. Using your thumb or rounded back of a spoon, make an indentation. Divide sweet potato filling between each cookie.

Step 8

Bake for 10-12 minutes; allow cookies to cool on baking sheet 4-5 minutes before removing to a wire rack to cool completely.
