Chocolate Peanut Butter Cream Sandwiches

Ingredients

  • Cookie Dough

  • 1 3/4 cups all-purpose flour
  • 3/4 cup black cocoa powder
  • 1 teaspoon baking powder
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 tablespoon dry milk powder
  • 1 tablespoon vanilla
  • 1/2 teaspoon instant espresso powder
  • 1/2 teaspoon fine sea salt
  • 1 3/4 cup dark brown sugar, packed
  • 1 egg plus 1 egg yolk
  • Peanut Butter Cream

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 2 cups powdered sugar, sifted
  • 2 to 3 teaspoons milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon fine sea salt

Instructions

Step 1

Heat oven to 350°F. Line baking sheets with parchment paper.

Step 2

Whisk flour, cocoa and baking powder in a large bowl; set aside.

Step 3

Mix butter, milk powder, vanilla, espresso powder and salt in a large bowl. Add brown sugar; mix well until light and fluffy. Add egg and egg yolk; mix to combine.

Step 4

Stir wet ingredients into flour mixture just until dry ingredients are moistened.

Step 5

Using a 1 1/2 tablespoon cookie scoop, drop dough on prepared cookie sheets, 2-inches apart. Bake for 10 minutes. Transfer cookies on parchment to cooling rack. Cool completely.

Step 6

Meanwhile, prepare Peanut Butter Cream. Mix butter, peanut butter, powdered sugar, 2 teaspoons milk, vanilla and salt in a large bowl with an electric mixer until creamy and smooth. Add additional milk, if necessary, for desired consistency.

Step 7

Place half the cookies flat side up. Pipe or spread Peanut Butter Cream on top. Top with remaining cookies, flat side down.
