12 ounces fettuccine pasta
½ cup unsalted butter, chilled
½ cup finely grated parmesan cheese, plus more for serving
Freshly cracked black pepper
Boil fettuccine pasta according to package directions. Reserve 2 cups of pasta water. Drain pasta and set aside.
Add 1 cup of reserved pasta water to a large skillet over medium-low heat. Bring to a gentle simmer.
Whisk in butter one tablespoon at a time, allowing it to completely melt.
Once butter has been fully incorporated, gradually add grated cheese while whisking constantly. Make sure cheese is fully incorporated before adding more.
Add cooked fettuccine pasta and toss to incorporate. Add additional reserved pasta water as needed until sauce is glossy and coats the pasta. Serve with additional grated cheese and fresh black pepper and enjoy!
