Cheesy Garlic & Kale Mashed Potatoes

Ingredients

  • 2 pounds potatoes, (Russet or Yukon Gold) rinsed, peeled and diced
  • 7 tablespoons unsalted butter, divided
  • 3 garlic cloves, minced
  • 4 cups loosely packed chopped kale
  • 1 1/2 teaspoon kosher salt
  • 1 1/2 coarsely ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup buttermilk
  • 1 cup shredded Mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

Instructions

Step 1

Place potatoes in large pot and cover with cold water. Set over medium-high heat and bring to boil. Cook until fork tender, about 15 to 20 minutes.

Step 2

Meanwhile, set large sauté pan over medium heat and add 1 tablespoon of butter. Once hot, add garlic and cook for about 30 seconds. Then stir in kale, a handful at a time, stirring and cooking until wilted. Once all has been added, season with 1/2 teaspoon salt, 1/2 teaspoon black pepper and crushed red pepper flakes. Cook until bright green, about 5 minutes.

Step 3

Drain potatoes and transfer to large mixing bowl. Mash with 6 tablespoons butter and buttermilk until smooth. Stir in kale and cheeses. Season with remaining salt and pepper. Serve immediately. These can be made in advance and stored in the fridge until ready to serve, just warm on the stovetop before serving.
