Ingredients

  • For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups mashed ripe bananas (about 3 large ripe bananas)
  • 1 large egg
  • 2/3 cups packed brown sugar
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons vegetable oil
  • 2 tablespoons buttermilk
  • 1/2 teaspoon vanilla extract
  • For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, cold
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

Step 1

Heat oven to 425°F. Spray a muffin tin with cooking spray or line with paper liners.

Step 2

Whisk flour, baking powder, baking soda, cinnamon, salt and nutmeg in a medium bowl. Set aside.

Step 3

Whisk mashed bananas, egg, brown sugar, butter, vegetable oil, butter milk and vanilla in a large bowl until well combined. Add dry ingredients and stir just until combined.

Step 4

Spoon batter into liners. Set aside.

Step 5

To make streusel topping, combine flour, sugar, butter, cinnamon and salt in a medium bowl; mix until crumbly.

Step 6

Sprinkle mixture evenly over muffins. Bake for 5 minutes; reduce oven to 350°F and bake for an additional 16-18 minutes or until golden brown. Serve warm with more butter for topping.
