Brown Butter Apple Spice Waffles

These Brown Butter Apple Spice Waffles are perfect first thing in the morning for breakfast or as a delicious dessert after a cozy dinner at home. The warm sautéed apples on top can be interchanged with sautéed bananas if you prefer. Either way, you can't go wrong once you garnish them with whipped cream and chopped pecans.

  • For the Apples:

  • 2 tablespoons unsalted butter
  • 2 large tart apples (such as granny smith or golden delicious), peeled, cored and thinly sliced
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 1 teaspoon cornstarch
  • 1/4 cup cold water
  • whipped cream, for serving
  • 1/2 cup chopped pecans, for serving
  • 1/2 cup warm maple syrup, for serving
  • For the Waffles:

  • 1/2 cup (1 stick) unsalted butter
  • 3 cups all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 large eggs, separated
  • 3 1/2 cups buttermilk
  • 2 teaspoons vanilla extract


For the Apples:

Step 1

Melt butter in medium saucepan over low heat. Cook until it stops splattering and just begins to get golden brown, about 5 minutes. Remove from heat and transfer to small dish. Let cool to room temperature.

Step 2

To make apples, set large skillet over medium-high heat and add brown butter. Once melted, add apples and sauté until softened, about 5 minutes. Stir in sugar and spices.

Step 3

In separate bowl, combine water and cornstarch together until dissolved. Then stir into the apples. Cook until thickened. Set aside and cover to keep warm while you make the waffles.

For the Waffles:

Step 4

In large mixing bowl, whisk together flour, sugar, baking powder, salt and ground cinnamon. Make a well in center and add in egg yolks, buttermilk, vanilla and cooled brown butter. Stir until just combined.

Step 5

In clean bowl, beat egg whites with electric mixer until stiff peaks form, about 8 to 10 minutes. Add egg whites, a spoonful at a time, to batter and gently fold together until egg whites are incorporated. Continue until all whites have been added.

Step 6

Heat waffle iron to medium-high, lightly butter and spoon in about 1/4 to 1/2 cup of batter, depending on how much your iron can hold. Cook until golden brown. Transfer to a wire rack set over baking sheet and keep warm in preheated 250°F oven while you continue to make rest of waffles.

Step 7

To serve, place warm apples over each waffle and top with whipped cream, chopped nuts and maple syrup.
