Cheesy Garlic & Kale Mashed Potatoes
If you find plain mashed potatoes a little boring, turn up the volume by adding sautéed kale and lots of cheese! They’re mashed potatoes for grown ups.

Ingredients
- 2 pounds potatoes, (Russet or Yukon Gold) rinsed, peeled and diced
- 7 tablespoons unsalted butter, divided
- 3 garlic cloves, minced
- 4 cups loosely packed chopped kale
- 1 1/2 teaspoon kosher salt
- 1 1/2 coarsely ground black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup buttermilk
- 1 cup shredded Mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Instructions
Step 1
Place potatoes in large pot and cover with cold water. Set over medium-high heat and bring to boil. Cook until fork tender, about 15 to 20 minutes.Step 2
Meanwhile, set large sauté pan over medium heat and add 1 tablespoon of butter. Once hot, add garlic and cook for about 30 seconds. Then stir in kale, a handful at a time, stirring and cooking until wilted. Once all has been added, season with 1/2 teaspoon salt, 1/2 teaspoon black pepper and crushed red pepper flakes. Cook until bright green, about 5 minutes.Step 3
Drain potatoes and transfer to large mixing bowl. Mash with 6 tablespoons butter and buttermilk until smooth. Stir in kale and cheeses. Season with remaining salt and pepper. Serve immediately.
