Crispy Skillet Gnocchi with Asparagus

Ingredients

  • 3 tablespoons olive oil, divided
  • 1 pound asparagus, trimmed and sliced into 3/4-inch pieces
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (18-ounce) package shelf-stable or refrigerated potato gnocchi
  • 6 tablespoons unsalted butter, sliced
  • 1 garlic clove, minced
  • 1 lemon, zested
  • Freshly grated parmesan

Instructions

Step 1

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add asparagus and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Sauté until asparagus is tender and starting to brown, 7 to 10 minutes. Add red pepper flakes and cook an additional 1-2 minutes. Transfer to a medium bowl.

Step 2

In the same skillet, heat remaining 1 tablespoon olive oil over medium-high heat. Add gnocchi, breaking up any that have stuck together. Cover and cook undisturbed until golden brown on one side, 2-4 minutes.

Step 3

Reduce heat to medium. Add butter, garlic and lemon zest. Season with salt and pepper. Cook, stirring often, until butter is nutty and golden brown and gnocchi are crispy, 2-4 minutes. Stir in asparagus. Serve with grated parmesan.
