Crispy Skillet Gnocchi with Asparagus

Ingredients
- 3 tablespoons olive oil, divided
- 1 pound asparagus, trimmed and sliced into 3/4-inch pieces
- 1/2 teaspoon crushed red pepper flakes
- 1 (18-ounce) package shelf-stable or refrigerated potato gnocchi
- 6 tablespoons unsalted butter, sliced
- 1 garlic clove, minced
- 1 lemon, zested
- Freshly grated parmesan
Instructions
Step 1
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add asparagus and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Sauté until asparagus is tender and starting to brown, 7 to 10 minutes. Add red pepper flakes and cook an additional 1-2 minutes. Transfer to a medium bowl.Step 2
In the same skillet, heat remaining 1 tablespoon olive oil over medium-high heat. Add gnocchi, breaking up any that have stuck together. Cover and cook undisturbed until golden brown on one side, 2-4 minutes.Step 3
