Plum Crumble Bars

Plums often get lost in all the summer fruit excitement, but do yourself a favor and don’t forget them this year. These delightful bars put plums to delicious use by layering them on top of a buttery, oat-filled crust seasoned with cinnamon. They are just the right amount of sweet and are sure to be a new summer favorite!

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, cold and cut into 1/2-inch cubes
  • 3 medium plums, pitted and sliced thinly

Instructions

Step 1

Preheat oven to 350°F.

Step 2

Combine flour, oats, sugar, brown sugar, vanilla, cinnamon, baking powder and salt in large bowl. Add butter and mix with pastry blender, fork or your fingers until combined. The mixture will be crumbly, but should hold together when pinched.

Step 3

Set aside 1 cup of crust mixture.

Step 4

Transfer remaining crust mixture to 9x13-inch baking pan. Press firmly and evenly into the bottom of the pan.

Step 5

Bake crust for 10 minutes. Remove from oven.

Step 6

Layer plums over partially baked crust, overlapping each slice a bit. Sprinkle remaining crust mixture over plums.

Step 7

Bake 35 to 40 minutes, or until crust is golden brown. Cool completely before cutting into bars.
