Ingredients

  • 5 cups puffed rice cereal
  • 1 cup sunflower kernels, roasted and salted
  • 3 tablespoons butter
  • 3 tablespoons brown sugar, lightly packed
  • 1 cup honey
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

Step 1

Combine puffed rice and sunflower seeds in large bowl; set aside.

Step 2

In small saucepan, melt butter. Once butter is foaming, add brown sugar, honey, and cinnamon. Simmer over medium heat 5 minutes. Remove from heat and add vanilla extract. Pour mixture over rice and seed mix, and stir using a wooden spoon until cereal is coated. Press mixture into a buttered 8x11-inch baking dish. (Use wet fingers to help with the pressing!)

Step 3

Freeze for about 1 hour, or until mix has hardened. Using a knife, cut into small bars. Serve immediately!
