Pumpkin Muffins with Maple Glaze

Ingredients

For the Pumpkin Muffins:
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup pumpkin puree
- 1 cup brown sugar
- 3/4 cup milk
- 6 tablespoons butter, melted
- 2 eggs

For the Maple Glaze:
- 2 cups powdered sugar
- 3 tablespoons butter, softened
- 5-6 tablespoons milk
- 1 teaspoon maple extract
- 1/4 cup finely chopped pecans
Instructions
Step 1
Preheat oven to 400°F. Butter the bottom and sides of muffin tin.Step 2
In large bowl, whisk together flour, baking powder, pumpkin pie spice, salt and cinnamon. In medium bowl, mix pumpkin puree, brown sugar, milk, butter and eggs. Add wet ingredients to dry ingredients and mix until incorporated. Scoop batter into muffin tin, filling each hole about 3/4 full.Step 3
Bake for 12-15 minutes until toothpick inserted into center comes out mostly clean. Allow to cool.Step 4
Mix together powdered sugar, butter and 4 tablespoons milk, adding a little more milk, if needed, until consistency is firm but not stiff. Mix in maple extract.
